On my first build, I tried sawing out a slot using a small circular rasp, which is fine for the bolt I'm going to use as the nut... But when this is done, how do I cut out the nut slot without it looking sloppy?

I use a woodscrew for the nut flatten one side to lay on wood, strings will lay in place between woodscrew threads, its like a #6 wood screw.
I like to use stove bolts for nuts. Trace the position of the bolt on the neck, cut each side of the slot with a miter saw (whatever you use for frets) and chip out the material between the two sawed lines with a chisel/screwdriver. You can clean out the slot with a file and have two clean sides when you fit the nut.
If you have a fret board you do not need a slot, I just glue it up against the top of the fret board, if you do not have a fret board I figure you could still glue the nut flat on top of the neck without a slot.

I just make 2 cuts with the fret saw the correct width apart and then remove the wood between the cuts. I also use the same fretting jig so it is square with the neck and frets.
I use bone mostly, with the occasional brass as nuts, and actually cut the slot smaller ans sand the nut down for a tight , glue free fit.
I plan on making a " nut plane" a wood block with a piece of tool steel as a blade so I can add consistency to that step.

I use a triangle shaped file. Untill I can afford the files made for different string gauges on stew mac. Big news I found a nut/bridge vice like they have at stew mac for 5 bucks yesterday at a yard sale!. I usually use rounded nut material for my cbgs, I use a round file on the neck to give it a nice bed to lay in. Then I can roll the nut back a lil to make sure I dont get string buzz after the epoxy sets.
