Has anyone else out there ever taken a humbucker apart, to make two single coils? If so, any pointers

( other than," don't break the coils".)

You'll need another bar magnet (or several small magnets, one for each polepiece)  because the typical  humbucker shares a magnet for both coils. Depending on how it's made, you may also need to come up with some additional pole pieces, which can be any iron containing metal ie, sticks to a magnet. Screws or bolts for example. I have a cheap one where both sets of pole pieces are sort of an all in one molded unit.
yep like Skeesix points out most humbuckers share the same magnet which gives one set of poles a north polarity and the other poles are south - i don't think it would work out cost effective to split a humbucker by the time you have bought extra magnets then devise a method of mounting the two pickups as again they share the same brass backed mounting plate
