I bought a gold coloured 3 string bridge from cb gitty.

looks lovely and well made.

I've made my fret board to go over the top of my olive wood body.

and the bridge is to low ,it will need to have a packing to go under neath..

now the question...

if I put longer adjust screws(3mm) to raise the blocks that the strings go through..

would this affect the tuning.

it might be a daft question I know but I've got to ask.

or would I be better off putting a packing underneath?

If I understand correctly, the neck is approximately level with the body and the addition of the fret board puts the string height such that when the strings are attached to the hard tail, the hard tail will not adjust the strings high enough to clear the frets.

If that is the case, I would recommend a spacer between the hard tail and the body to raise the hard tail high enough to work without further modification. Longer screws may work, but they would push the adjusters up at a fairly steep angle. That might affect the ability to keep tuning.

Besides, a nicely made spacer block would look cool anyway when finished.

so a spacer will have to do.

thickness of the spacer is the question. I would recommend string height above the fretboard  about a 1/8" of a inch at the half way point of the height adjustment of the three string bridge. So you adjust up or down at the bridge to get the perfect string height above the fret board.
