Ok nice pickup, and following the advice on a YouTube video, I got the dog ears ground off and it is bolted directly to my 3-string neck.
However, I notice it is very microphonic. Is there a way to reduce this? I've heard old 60s and 70s Teisco pickups we also microphonic, but by wax-potting them the problem could be reduced a lot.
What might be a good remedy here?

I'm betting that pickup is wax potted and sealed. The outer shell is usually grounded to the base, could you have damaged the ground connection when you ground off the ears? Could also be a problem with the cord. You could try placing a piece of foil between the pup and body to see if it's a shielding problem.
The ground wire looks pretty good, so I think it is ok. There are new mounting screws underneath the coil/magnet that I added to attach to the neck. They are beveled flat head wood screws, so they lay pretty low against the metal, but they are not totally flush, they probably stick up about a half millimeter. So the magnet used to grip grips (magnetically) totally against the back metal, but now it probably grips (magnetically) mainly to the screws.

I'm also a member on a guitar forum and there was a thread about acoustic guitars with magnetic pickups mounted on the soundboard and in the soundhole causing weird problems due to the vibrating from the soundboard. But the old Dearmond had a pickup that mounted to the neck end and sat above the soundboard didn't have any problems. Don't know if this could be the problem your having or not.
Okay, I watched the video. Since the "dog ear" isn't flush with the bottom of the pickup, I'm guessing that if it is torqued down to the top, it could flex the pup chasing and cause a problem to. You could try loosening the mounting screws to see if it makes a difference, but it's just a guessing game for me at this point without seeing it.
I don’t know the answer to this problem, so… thinking in a different direction, mounting-wise…
Maybe an oblong-shaped hole in which to put the pickup, and mount it as it was intended to be used on top of a factory-made acoustic? Or just mount it in/under the box top?
FWIW, I have used this style pup (the inexpensive eBAY version, not the O-Fish-Shul “Gold Foils"), in/under a cbg box top, and in standard acoustic guitars a number of times without any probs. (As in the CBG I pic’d here, above: usually I remove the pup's stock cover before installation.)
Do you have *no* microphonic behavior at all? Or very little?
Mark > These pups absolutely have a bit of a microphonic effect. Personally, I just don’t see it as a problem since I don’t turn up an amp loud enough for ‘em to cause the squealing/feedback one can expect with this kind of cheap, probably loosely-wound and/or unwaxed pickups. (On the other hand, I kinda’ like that they amp the knocking somewhat when drumming on the guitar.)

Here is the pickup on the neck, and how it is attached. The ground wire looks like it is connected ok.
And here are the wood screws attaching the pup to the neck. Notice they protrude up a little, so the magnet is no longer fully hugging the back metal.
