A while ago NightOwl put up a two part tutorial on how to play Amazing Grace and I learned it on a 3 string. This guitar is a 3 string with an additional bass string, one octave lower than the lowest of the three normal strings. You can easily adapt any three string piece to work with the extra bass string. If anyone wants to see the amp settings there is a picture in the first (oldest) of the comments.

I'm afraid that the video is a bit over exposed. The camera was set to manual and I shot quite a bit. This was taken from later in the recording and the light levels must have risen a bit.

I wanted to comment on the piezo pick ups. They really are the only way to hear what your guitar, mandolin, uke, etc sounds like because they produce a flat response. You can several different result from one type of piezo crystal depending on how they are, as you said, fitted. There are so many variable that can change the tone. For instance: What type of adhesive is used, it’s curing time, if an adhesive is being used, the crystal placement relative to the distance between what is driving the saddle (aka string witness) and where the sound board is being driven.
Are your pickups wired directly to the output jack?
If so I'd highly recommend looking into installing a preamp if you haven't considered it already. It would surely help you realize the full sonic potential of any guitar you build.
