If the hum goes away when you touch the strings, you've grounded it correctly. Single coil pickups are prone to hum, but humbuckers are generally way better (hence the name), as long as you've wired it so that it is fully humbucking. Using quality shielded wire and shielding the wiring generally may help reduce the hum. Some buildings and their electrical wiring are worse than others for inducing hum in guitars - being near fluourescent lights and computer screens can be particularly troublesome.

Chickenbone John is bang on the money here. Something I use which really helps with noise is to wrap the coil in adhesive copper foil tape, then connect the tape with a wire soldered to your grounding point. Much less noise!
