 Here's a diagram  just delete the tone pot , give you a better idea anyway

My mini 3 way doesn't have the 7th lug on the end, is there any way around that?

 I'm going to be using rod piezo bridge and a disc piezo in the neck position on this build and I'm using 1 vol and a blend pot rather than a switch .

Try both, switching tween the blend pot (rhythm sound) and mag pup only (lead sound) this way the blend pot can be 'preset' and switched in and out. Variants on this has been my favoured circuit since 2010.

It is possible that the switch is working as intended but the middle and pizzo positions sound the same because the two pups just do not mix well. Pizzos will often completely dominate when mixed with a mag imho because of their much greater impedance.. Have you tried tapping the mag pup with a screwdriver,keys etc?

A lot of guys here approach a pickup switch as a kind of 'gate' which opens and allows a pup into the circuit, I obviously don't know if this is your approach, but I suggest you try the opposite, use the switch for the hot side of each pup only, and use it in each position to short unwanted pup to ground, this is often much easier. With a multimeter you should work this out in short order :)
