I was thinking of using individual roller bridges for my 3-string that is setup with peizo and I don’t have room for a rail. Will the individual roller bridge create enough vibration for the peizo to be effective?

I've thought about using a couple piezo on a switch or blend pot and place one at the bridge and one at the neck and be able to switch back and forth or blend a combo.

I've found that every Gibson style bridge works better with a neck to body angle to get the string height right all the way up the frets unless you cut a bridge cavity that sinks/lowers the bridge height. It takes some work to figure out what will work best.
Using individual saddles can be easier to work with and may not need a neck to body angle depending on how tall the saddles are.
You can even fit the piezos directly under the strings. This is what Maker Geri Ellsworth did for her Commodore 64 bass guitar she brought to MakerFaire years ago.
Here's the video where she describes the guitar itself. She went overboard on the electronics but it's still pretty cool.
