sometimes you don't...... The great nut debate in my head rages on...... Any opinions on whether to use a hard wood and notch it, or a bolt or metal of some type?

Variety is the spice of life. Tryemall! I like the easy use of hardwood most, but if you have a bone nut blank that's fun too. I like metal with threads so the strings have a groove made for them.
The easiest is to just use a bolt---I use hardwood, bone, or some kind of antler or horn!! mahogany is on many of my builds, and it seems to work well---ebony is one of my favorites also!!!! anything with a fine grain will work.

I recycled/repurposed a used head stud from a recent engine rebuild. Hardened steel is extremely hard to cut though, haha
Corian works great too, you can get free little samples at HomeDepot etc. very hard like bone but works easily with wood tools. And it's free.
