  Nothing wrong with one string! Just since you have plenty of room, 2 or 3 opens up a lot more options.

   Tanks for your tips Bluesheart,    I can also put three strings,the  spoon has three holes but the wooden handle although it is often I think with three strings to bend a lot, but I can try        Posso mettere anche tre corde, il cucchiaio ha tre fori ma il legno del manico anche se è spesso penso che con tre corde si pieghi parecchio, però posso provare

  Since you have frets, I'd go "medium" on the action so you can  go either way when playing it.

  I'd have had a hard time stopping at one string with all that work! Do you have plans to add more later?
