I figured I would add something helpful to the forum. I dont live in Texas but I do know how to make the absolute best spare ribs. So im told. You try it and see for yourselves.The worst that can happen is you may put on a pound or two. This is a fammily recipe with very important steps but not hard to accomplish. best way to keep temperature is with a gas smoker that has water tray and woodchip resiovior. but i usually do this with a standard webber and a rib rack.

Step 1.
Apply Salt (even coat med coverage )
Pepper (even light coat)
Garlic (even med/light coat)
Adobo (very light spotted coverage)
To bottom side first then Repeat to top of slab
Step 2. Allow ribs to set on counter covered with foil or wax paper for at least 2 hours. 3 hours is a charm

Step 3. insert ribs into grill away from direct flame.

on my weber i use a rib rack. I stand the ribs up on one side and build a small fire on the other.with a small iron skillet full of water boiling on top of it.And cover with the holes about 2/3 closed over the ribs.
In a gas smoker water trays are an easier way to keep it steamy.

Feed hickory chunks(wet) to your fire and Keep a constant temperature of 225 degrees for about 2.5 to 3.5 hours. untill ribs are showing at tips 1/4 to 1/2 inch. Make sure you keep a small iron skillet of water on top of the fire the whole cooking time to make sure you dont make pork jerky.

Step 4. remove ribs from grill and let stand for 15 minutes. Always cut them from the bottom so you can get between the bones neater.

If you notice your ribs are getting to black while cooking cut back on the hickory. or stop adding it all together. if you smoke them the first hour to hour and a half. the flavor will be good and strong.

If you follow these directions properly you will not need any bbq sauce. My fammily believes sauce is to give flavorless meat flavor. or help dried out meat swallow easier.With this recipe the only accessory neccesary is a loaf of good white bread to use as a tasty napkin while your catchin the juice at your elbows.

so recap. 1. let seasoning set 2 to 3 hours
2. 225 degrees with water boiling over fire
3> hickory smoke
Pretty easy huh? OK Im hungry now.

Wow, Steve, I grew up in Grapeland and seeing the pics brought back some memories. Thats pretty cool what yall've got going on there. (and yes, I do consider yall've a word).

i play guitar with a old time dulcimer music club in east texas. We meet once a month at the camp street cafe in crockett, texas. The gillette brothers grand father owned that store back in the 30's. Lightin Hopkins played on the front porch of that store as a youngster. They have a statue of him in front of the club. go to campstreetcafe.com and click on history it will tell some of the history. steve

Im not a texan - but its good to bee amoung them - if it helps I have a servere adiction to 'Texjoy' and as you can't buy it over here have to get people to bring it back for me when they go for meetings in Dallas!

Joe I think your right about Pearl in Ft Worth.
I still get it next time I do I will read the can.
I have been to the Shiner Brewery I took the tour and everything it was really outstanding I must say.
But it is way to expensive up here down ther in Shiner it is cheap in the bars around town and at the beer stores.
