Hi, if it was for me I would use the treble side of the neck, and leave the string spacing as is. You will have to recut (widen) a couple of slots in the nut, and maybe adjust the truss rod as there will be less tension on the neck so yo may get some back bow.
The reason for the treble side of the neck is easier chording and better slide action.

But that's me.

You could use 3 strings on the treble side as your 3 string git and put 2 heavy gauge string on the bass side and drop tune them to play some bass. Like a .52 and a .46.

Tex, Seasick Steve plays some six string guitars with only three strings. On one that I saw on YouTube he strung it on every other tuner (and fret). On another guitar he left a gap between the bass string and the two others that were next to each other.
