Just cut the plug off, if your pickup doesn't have a lead wire then cut a piece of wire off to wire the pickup to a volume pot, a piece from volume to tone and then a piece to the jack.

Then you probably have some left over plus the 2 cable you haven't touched for another guitar or 2.

OK, so I'm still a bit dense. With that cord, I count 3 ground wires and 3 conductors. Do you strip them to 1 red cable, 1white cable and 1 yellow cable? that gives a conductor and ground for a single coil. Otherwise, I'm not getting it. I do like the idea though...

In the pic he’s just showing that you can get 3 sets of wires in 1cable? You’re only going to be using 1 set of the cable to wire the pickup?

I use the wire from old Christmas mini lights. Enough wire in one strand to make hundreds of CBGs.

I buy the mini usb cables for cellphones at the DOLLAR TREE, they are shielded.
