I have the eBook "the How and Tao of Folk Guitar." It teaches how to play in open G tuning.

I noticed that in a lot of chords the sixth string is omitted from the strum and deadened by your thumb so it doesn't sound.'I've also heard that Kieth Richards uses this tuning at times and he removes the heavy sixth string and plays without it.

Has anyone ever thought of building a 5 string guitar?

There are many rock songs done in an open tuning. "She Talks to Angels' by the Black Crows is a straight up open E. Many other songs in more modified tunings. 

The concept of a five string is sound. If it's what you want then go for it. Might consider using a six string neck. Because there would be a lot of stress on the neck and body joint. This guitar would really need and benefit from an adjustable truss rod. 

Made one last year and planning to build a new one soon.

Shane does that in a lot of his videos with a 6-string body, just cuts that low one right off!
