If it's twangy, it might be buzz... do you have them glued in?  give the box a squeeze in various places see if it goes away...

Hi piezo's pick up body vibration, not string vibration, so depending on how sensitive the top is, it my be overloading the system. Is the top glued down good.

I  like to place the pickup in with double sided tape first and if I'm happy I will glue them in place after. You would have to have access to the inside of course, not always possible I know.

I have put, and normally do, use 3 piezo's glued to the bridge plate in my full guitars, and they sound great. I put them under the saddle in between the 1-2, 3-4, and 5-6 strings. But always use a pre amp. However these are K&K brand and far too expensive [for some reason] to go in a CBG. But they do come in two size diameters, I use the smaller diameter ones.

Also Piezo's are well known for their annoying "Quacky sound" when not used with a pre amp.  

Having said all that [too much again] I have often put two piezo's in 3 string CBG's with no bad effect, so what john suggests is a good start.
