That's about it...really for convenience of adjusting volume on guitar instead of reaching for the amp every time.
Piezos are other member's specialty...I used to install them years ago, but only use mag pickups anymore.
As for volume/tone pot values with piezos, I believe other builder/members use anything from 500k to 1Meg pots for either position.
A tone pot with a piezo is not really worth the effort Jeff, not much,if any, effect, but you can soften the piezo harshness a bit by putting a capacitor across the contacts at the jack, there's a blog somewhere regarding that, i think it was a 0.01uf capacitor by memory

Pardon my ignorance, but why does adding that capacitor across the + and - lugs of the jack soften the output of a piezo? I'm new to the CBG thing, haven't built any yet, doing research while waiting for parts from Amazon.

Darryl, thanks for the reply. I didn't see the significance of Scott's reply until I re-read it. It's the filtering aspect of the capacitor that makes the difference. If I understand correctly, it would act something like a tone pot.

Capacitors can be used for many applications. In tube amps they are used to filter out 60hZ hum from the DC power found inside the circuit powering the plate/screen/cathode of the tubes/valves.
Capacitors are also used to isolate that high voltage DC power to those locations.
One interesting note: AC and DC power can exist on the same wire without affecting each other. But only AC can pass through a capacitor, DC cannot.
And they are used to filter off certain frequencies of the AC signal (from the guitar) to ground.
A low value capacitor will affect high frequencies...high value affects lower ones.
So adding a low value capacitor on the guitar's 1/4" jack will take some of the high/harsh frequencies of the pickup signal (which is AC), and pass them to ground, thus allowing more of the good stuff to continue to the amplifier.
