I have just finished my second build, a fretless LPG. I am really pleased with it,  looks really cool, well to my eyes anyway. I fitted it with a single piezo pickup but can't seem to get the position right. First I tried near the bass string by the bridge but it was way to sensitive. Next on the back which is wood, followed by the neck stick the back and the side. The uber cool sound unamplified sounds distant when played through my little Vox amp. So 3 questions for the forum 

1:  Would a double piezo help?  

2: What do pre amps do and would one help?

3: where would you place the pick up?

very nice lookin git!  I would keep it under the bridge but shield it with hot glue and a cap or piece of wood to keep it from picking up too much.  I have yet to put two piezos in but there are people here that will only do two, need to try that soon myself.  Wayfinder is using preamps and says they really help. Just ordered my first of those and going to use it on my Gordy gitty.

I recommend that you follow the advice of Keith and Wayfinder. Isolating the piezo a bit with glue, silicon, leather, etc will help control the sound. As for a preamp, it all depends on what you want to accomplish. I recently purchased a Behringer V-Tone Acoustic Driver DI ADI21 from Sweetwater ($29 including shipping). It is built for use with a piezo and I have to say that it can do amazing things. I have only started to tweak it, but I can already adjust it to sound exactly like the single-wound pickup I have installed on the same guitar. If you're looking to produce mag pickup sound from a piezo, a good preamp will do it (as well as a lot of other things), but if you just want the amplified sound of a piezo, then go with the isolation tips first and see if you get what you want.
